Can I host a UDP game server with ngrok?

ngrok's documentation lists HTTP/S, TCP and TLS endpoints, not UDP. Many game servers use UDP (Valheim, Palworld and Factorio, for example); VoidPort tunnels UDP as well as TCP.

Which is better for Minecraft Java?

Minecraft Java uses TCP, which both support. VoidPort adds an address without port (name.voidport.net) and PROXY protocol, so the server sees real player IPs (tested with Paper).
